I made this pimiento cheese spread for lunch today. Since I didn't have any gluten free bread made, I put it on some GF crackers and I must say, it was wonderful! I copied as best I could the pimiento cheese that a tea room in our town serves. Mine was better - I think because my cheese wasn't as sharp as the cheese they used.
I didn't measure the ingredients, so if anyone wants to make it, you just have to eyeball it.
grated cheese (I used the cheddar/jack finely grated cheese from Costco)
chopped pimientos in a jar
chopped pecans
chopped candied jalapenos
mayonnaise
Mix all ingredients together until it is the consistency of a chunky spread.
Yum!
